Cerignola Olives are peculiar of the Apulia region. The fruits, harvested typically during the month of October are de-bittered with Lye (caustic soda) and have a rather huge size, in some cases reaching 18gr of weight. Cerignola, with their typical plum shape, are one of the most successful and popular table olives around the world being notably suitable for aperitifs or associated with cheese appetizers. Many scholars believe the forerunner of this olive is the ancient roman variety “Orchites” but other authors agree instead it was the House of Aragon, in the late XV century, that brought the cultivar in the region and as a proof they point out the local name.
